The WiFi version of one of these should work: http://gopro.com/  There were
several aircraft on static display at AOPA Summit with GoPro cameras mounted
in various locations.

There is also a version of the Sony with WiFi, and a simple watertight case
(with 1/4-20 female thread for mounting) is standard with this camera, plus
it has a smaller profile (read: less drag)

Try googling for ipad reversing camera and you will see that a lot of people
are trying to do this. Some seem to have done it!
