Dave - as others have already pointed out, there is a time-constant 
involved in that relationship, and it also depends on where the 
sensor is located in the liquid.

It's interesting to note that in Kitplanes Jan 03 there is an article 
describing the Rotax "boot camp" run by Canadian distributors Rotech 
Research Canada. The instructor said:

"If the coolant is doing its job, the cylinder-head temps will be 
within limits. We monitor CHTs, not coolant temps."

And in passing, the Cranfield PFA Rally review in the same issue of 
Kitplanes included a picture with several Europas (I identified 
G-BXII, G-DURO, G-PTAG, G-BXDY, G-BVLV or G-BVLH & about 4 others) 
and the Europa Club stand in the background. The factory stand is 
rather obscured by the Beagle 206 of Key Publishing.
