Having recently built and finished wings,I personally don't think that vacuum
bagging wings will be a great time saver. 
Bi-axial cloth is used for leading edge layup, with uni & bid on upper and lower
trailing edge.This covers all  flying surfaces, but represents only 10-15% of
the wing building effort. The largest part of the work is root reinforcements,
foam tip shaping, aileron bellcrank chamber, TE closeouts and constructing /
fitting flaps, ailerons and root extention. Vacuum bagging won't help with any
of this.

If you layup at correct temperature (important for resin viscoscity and wet out)
and take care to remove excess resin from cloth (scrap bid can be layed over and
used like blotting paper, just ensure that layup has been fully wet out and
sqeegeed first), I don't think that you will have any weight penalty over vacuum
bagging.
