Have you considered a Twinmax balancing gauge - dead simple - works on the 
differential
pressure between the two manifolds.

Just remove the balancing pipe and connect one pipe to each manifold. There is
an access hole at the bottom of each Bing carburettor intended for balancing but
its impossible to get at so a bit pointless. Using the manifold connections
is just as good.

We used a twin mechanical vacuum gauge before and it was very hit and miss. 
First
problem is that no two gauges are the same or equally linear accross the 
pressure
band. Second is you have to damp out the oscillations caused by the fluctuating
pressures.
