Hi! Shaun.
G-PTAG is fitted with headrests ex. BMW (series 3) I bought scrap seats from
a zapped BM , cut out the section of metal work from the seat back bolted it
into the inside of the Europa seat back compartments,
then cut holes into the top to accept the head rest legs. They are removable
also adjustable . The foam from the seats and backs is good to cover for
final seating also.

  The seat belts wrap over the seat back and attach near the spar. This does
mount to the strongest point in the airframe, but isn't the best place
ergonomically, as it can cause spinal compression in a crash.  It seems to
me that running the straps over a guide bar mounted stoutly to the seatback
but at the right height to bring them straight back from the shoulders,
thence to the existing mount points, would improve things.  Has anybody
tried this, or considered this important enough to address?

  On that note, has anybody considered installing headrests?  They'd have to
be moveable to allow ingress/egress and access to the baggage compartment...
