It sounds as if your plastic wrap is too thin. I had used visqueen about .004" thick. Removal involved getting an edge of a razor under a corner to lift it and then peeling it off by hand. Steve Haga

I used the K-36 over UV smooth prime to seal it and am going to do my flyoff in this condition. The coating was good and it stayed pretty smooth. I used a HVLP gun and did not have good luck with it.

My tips are rounded because I nicked one of then in moving the airplane around on the ground. I radiused the edge and made all the rest look the same as the affected tip. Many people have done this.
