Phil,
There are certainly a few Subaru-powered Europas still flying, and some
under construction.
Names that come immediately to mind are Simon Collins, Mark Jackson, Bill
Wynne, but I'm sure there are others too.

As a Vans RV builder I must apologise for invading your mail group but as
someone who is about to take on the leviathan task of getting the PFA to
accept a Subaru engine in my RV I turn to those who have "done it before".
I've been told that in the long distant past there were europas flying with
Subaru's under the bonnet....if you were that person or could point me in
the right direction I would be eternally grateful.
